Does stock cafe automatically update the ticker symbol once the merge is finalize and trade under the new ticker or do we need to close the position and re-enter?

Unless things have changed, which I doubt, there is no automatic transfer to new tickers.
You will have to do this manually.

In order to record the most accurate trades for calculation. does dates matter in stock cafe calculation?
i should record buy/sell at cost to capture no profit before ticker change? Record new buy order with value date the day i make the purchase after symbol change?

Date entered should be the merged date.
